If you find yourself with leftover potatoes, you don't have to throw them out! Here is an easy recipe to avoid wasting those lovely spuds!
Potato dumplings can be stuffed or not, but either way they are always delicious and filling! This dish comes from Slavic kitchen, especially prepared in Poland. Personally, I prefer my dumplings stuffed with fruit: plums or strawberries.
INGREDIENTS:
For each kilo of potato we need:
200g of potato flour
1 egg
1 tablespoon of salt
Filling:
0.5 kg of plums (or strawberries)
Butter
Bread crumbs
Some sugar
1 pouch of vanilla sugar
Mash/ mince the potatoes. To this, add flour, egg and salt. Knead the dough until it is smooth. The dough should be rolled to a thickness of approximately 4 cm, then sliced into pieces about 3 cm long and wide, then shaped into round pancakes.
If you want to have stuffed potato dumplings, add the fruits and sprinkle them lightly with sugar. Per dumpling you will need about a tablespoon of fruit filling . Next wrap the filling and form a shapely ball. Next put the dumplings into a large pot of salted boiling water. Boil them for 3 minutes (they should rise to the surface when ready). If it is ready, drain the dumplings and plate. According to taste serve with yogurt, cream, cinnamon and/ or some sugar.
Additional information:
The dumplings of course can be prepared without stuffing. You can also serve them with different sauces - mushroom, tomato or gravy. Another delicious way of serving this dish is accompanied with a sauerkraut salad!
